Egg Briyani

– Add oil in a pan and saute thinly sliced 1 big onion to golden brown and keep them aside
– Add oil in a pan and add 1/4 tsp turmeric powder, 1 tsp red chilly powder, 1/2 tsp curry masala powder, 1/4 tsp salt and add the slit boiled eggs and saute for 2 minutes
– Add oil and ghee in a pressure cooker and add cinnamon, cardamom, star anise, bay leaf, cloves and 2 onions medium sized and saute for 2 minutes
– Add slit green chillies, ginger garlic paste and saute for a minute
– Add finely chopped tomatoes, salt and cook until it turns mushy
– Add 1/2 cup curd in a bowl, 2 tsp red chilly powder, 1 tsp coriander powder, 1/4 tsp turmeric powder, 1/2 tsp curry masala powder and mix it well
– Add the curd mixture in the cooker and cook well for 5 minutes
– Add chopped coriander leaves and mint leaves and saute well
– Add soaked rice and mix it gently
– Place the eggs over the rice, add few fried onions over it and few coriander leaves
– Cook for 3 whistles, 5 mins in low flame and switch off the stove
