Vadagam for Tadka

– Grind 1kg cleaned pearl onion in mixie – don’t grind to a fine paste, break into pieces
– Grind 1/2kg unpeeled garlic in mixie – don’t grind to a fine paste, break into pieces
– Add 1/4kg mustard, 1/4kg broken urad dal, 100gms fenugreek, 100gms cumin seeds, 100gms fennel seeds in a big bowl of water and check for any stones or dirts
– Add the above mixture in a big plastic or glass bowl, grinded small onion, grinded garlic, more chopped curry leaves, 150gms turmeric powder, 1 pudicha pudi rock salt and mix everything with hand
– Set it tight in the bowl and close the bowl with cotton cloth
– Leave it for 2 days and open it on the third day
– Dry it in plastic sheet under sun the whole day
– Then add 150ml velakuennai and 50ml nallaennai and mix it in the same plastic sheet thoroughly
– Put it in the plastic box and check weekly once for a month, if it’s fine
– If required keep it in sun for sometime
