Vegetable Kurma

– Grind ginger, garlic and onion to a fine paste
– Grind coconut, fennel seeds, roasted gram, pepper and cumin seeds to a fine paste
– Chop tomatoes, carrot, beans, broad beans, capsicum, cauliflower and potato into medium sized pieces
– Add oil in a pressure cooker and sauté cinnamon, cloves, bay leaf, onion paste, vegetables, green peas and tomatoes
– Add turmeric powder, red chilly powder, sambar powder, coriander powder, salt and the coconut paste
– Cook for 4 whistles and add coriander leaves after pressure subsides
