Coconut Cookies

– Sieve 1 cup wheat flour or all purpose flour and 1/4 tsp baking soda
– Add 4 tbsp coconut oil and lightly mix the oil with the flour
– Then add 1/4 cup desiccated coconut, 1 tbsp rava, 1/2 tsp cardamom powder, 1/4 tsp dry ginger powder and 1/2 cup powdered jaggery
– Mix everything well with hand and add 2 or 3 tbsp water if required to form a dough
– Pinch small to medium sized balls from the dough and place on the greased tray
– Press one cashew or almond on each cookie and slightly flatten (don’t flatten too much) them while pressing the cashews
– Bake the cookies at 180 degree celsius for 20 to 25 mins
