– Marinate the chicken by adding curd, red chilly powder, curry masala powder, turmeric powder, coriander powder, ginger garlic paste, chopped coriander leaves, mint leaves and salt for at least an hour
– Chop onions, tomatoes and slit the green chillies
– Chop the coriander and mint leaves
– Add oil and ghee in the briyani davara, add cinnamon, cardamom, bay leaf,
cloves, star anise, mace, stone flower and saute for a minute
– Add sliced onions and green chillies and saute till the onions turn golden
– Add ginger garlic paste and saute till the raw smell goes
– Add chopped tomato and cook until it turns mushy
– Add the marinated chicken, red chilly powder, curry masala powder, turmeric powder, coriander powder, chopped coriander leaves, mint leaves and salt
– Add soaked rice and required quantity hot water and keep the stove in high flame until the briyani is half cooked
– Heat a dosa tawa, keep the stove in low flame and keep the covered briyani davara over the dosa tawa and cook for 10 mins
– Keep dum by keeping a large pan of water over the briyani davara
