MURUKKU

– Soak 800 gms murukku rice in water, drain the water and dry it in sun, until it gets dried completely.
– Without adding oil in a pan, sauté 150 gms broken green gram and 100 gms urad dal.
– Sprinkle some water to 100 gms par boiled idli rice and soak for 1/2 hr.
– Without adding oil in a pan, sauté the soaked par boiled idli rice and make pori arisi out of it.
– Sauté half of it at a time, so that pori arisi comes out properly.
– Grind murukku rice, broken green gram, urad dal and pori arisi in rice mill to a fine powder.
– Sift the grounded powder in sifter.
– Add salt, asafoetida powder, ajwain seeds, white/black sesame seeds and water to the sifted powder.
– Knead the dough and put it in murukku making machine and deep fry in oil.
– Make the murukku in jaarani by applying oil to the jaarani.
