CHICKEN DUM BRIYANI

– Add ghee in a pan and sauté rice in it for few mins, don’t soak in water.
– Mix chicken, ginger garlic paste, curd, garam masala powder, red chilly powder, lemon juice, salt and marinate for half an hour.
– Without adding oil, sauté all garam masala items, fennel seeds, cumin seeds, black cumin seeds, cashews, almonds, smash it in stone grinding machine, then add water and grind it to a fine paste in mixie.
– Smash coriander leaves and mint leaves in stone grinding machine.
– Smash green chillies in stone grinding machine.
– Cut big and pearl onions into pieces and smash it in stone grinding machine.
– Add oil, ghee in pressure cooker and sauté all garam masala items, fennel seeds, cumin seeds, cashews, almonds, then smashed onions, ginger garlic paste, then directly smash chopped tomatoes.
– Add the garam masala items grounded paste, red chilly powder, coriander powder, garam masala powder, turmeric powder, curd, lemon juice, smashed green chillies, smashed coriander mint leaves and sauté for sometime.
– Add marinated chicken and sauté for sometime.
– Add boiled water and once it starts boiling add sautéed rice and close the pressure cooker.
– Keep the gas in low flame for 10 mins and heat the dosa tawa in another burner.
– Keep the pressure cooker on the hot dosa tawa for 10 mins in low flame and then switch off the stove.
– Once the pressure subsides, add ghee, lemon juice, smashed coriander and mint leaves.
